"Passin' Thoughts" for September 2000

Some people dream dreams; I dream different dreams.

I was going to write about Sir Issac Newton, gravity, gravitas and gravy and drunken 17th century geniuses falling out of apple trees, which was the real reason Sir Issac Newton was lying on the ground when the apple hit him on the head.

But things change and I changed my mind after I dreamt that I fell out of an apple tree and landed on top of Sir Issac. Fortunately, he was drunk enough that he thought I was an apple. Truth of the matter is I was up in the tree (this makes me pretty old) dreaming of recipes have never tried.

Here are a few. Actually, I would rather you try them and if they have an adverse effect on your dietary system, as the old saying goes -- better you than me.

Here goes. I bake salmon often and I wonder how it would be if I (or you) took a nice fillet of salmon, sprinkle fresh chopped dill (or dried) on both sides, grind a moderate amount of fresh pepper on it and bake it for 20 - 25 minutes at 450 degrees skin side down.

Pull the fish out of the oven, slide onto a platter, sprinkle with fresh lemon juice and serve with a dill mayo, which is a simple mixture of heavy mayo, a little lemon juice and a heavy dose of dill weed. Mix thoroughly and serve with fish or with élan if you have any handy.

One more of my dreams and then I will quit. Put butter in a skillet, get bubbly hot and put one or two veal chops seasoned with pepper and garlic and brown nicely on both sides. Pour a shot of brandy (if you are rich enough, use cognac) over chops, simmer for a minute or two then remove cops. Set them aside, covered loosely to keep warm and pour in about 6 or 8 ounces of heavy cream into the skillet. Raise the heat to make a reduction adding a little nutmeg to the pan. Reduce until it makes a nice sauce. Place chops on platter, have angel hair pasta ready, pour sauce over chops and pasta, sprinkle lightly with fresh chopped parsley and let me know if it's edible. Better you than me again.
